Without our teams we wouldn’t be able to deliver our food experience to our customer, these guys mean a lot to us. From sensible working hours to ensure a friendly environment, the welfare of our team is at the heart of the business. Putting a smile on someone’s face isn’t just about the customer, it always starts with our own team… we can guarantee you will always see our teams smiling, and the food tastes better for it.

We feel a duty to take action on the skills shortage in our areas, particularly in the rural areas of some of our pubs and the challenges that face us with our sister sites the Channel Islands. We prioritised chef training at the beginning, working with HIT training to develop our own chef academy within level 2 commis chef apprenticeship accreditation. With a tailored programme that meets our standards and ideals, supporting our chefs with 1-1 mentoring, stages in different kitchens around the estate and paid work days in other aspiring business.

Alongside the training workshops, our Apprentices visit our suppliers, take in demos on the produce we buy and learn new skills and respect for the ingredients we use. Crucially all apprentices rotate around the estate to continue their learning under different chefs in different environments; all with the aim of creating CDP’s, sous chefs and head chefs of the future.
